Sausage, Tomato and White Bean Soup (Makes around 40L)
3/4 cup olive oil
12 lb raw Italian sausage
12 onions, diced
30 carrots, chopped (4-5 bags)
3 bunches celery, diced
2 heads garlic, peeled and minced
2/3 cup dried Italian seasoning (30 grams approx.)
12 boxes chicken broth (900 ml each)
10 cans (28 oz) diced tomatoes, drained
4 tins (156 ml) tomato paste
1/2 cup balsamic vinegar
1/4 cup sugar
2 TBSP pepper
10 bay leaves
10 cans (19 oz) navy beans, drained and rinsed
4 packages frozen spinach (300 gram each)
